Mechanics
Coven
Coven checks whether you control three or more creatures with different powers. It rewards an uneven board, which is a strange constraint that makes +1/+1 counters worth spreading around rather than stacking.
Decayed
A creature with decayed cannot block, and it is sacrificed after it attacks. Free bodies with an expiry date, which pairs naturally with sacrifice payoffs.
Disturb
Disturb lets you cast a card from your graveyard as its back face, usually a Spirit. The set uses it to give creature cards a second life without full reanimation.
The set
Midnight Hunt is the daylight half of the Innistrad pair, and the two Commander decks take the two obvious sides: the humans holding the line and the undead pushing against it.
Coven is the more interesting mechanic. Needing three different powers means you cannot just pump the whole team evenly, so the counters end up spread across the board in a way that makes blocking awkward for opponents. It is one of the few designs that punishes a symmetrical anthem effect.
Decayed pulls in the other direction. The tokens cannot block and die after they attack, which sounds like a drawback until you notice how many sacrifice outlets a Zombie deck runs. Wilhelt turns every Zombie death into another decayed body, so the deck effectively converts removal into more attackers.
Where to start
Undead Unleashed is one of the better tribal precons of its era and needs very few changes to be table ready. Coven Counters wants a few more counter payoffs before it holds up.

Leinore, Autumn Sovereign
A Selesnya coven and +1/+1 counters deck from Innistrad: Midnight Hunt, led by Leinore, Autumn Sovereign, maintain three creatures of different powers to trigger coven and draw cards while growing your Human army one counter at a time.
Wilhelt, the Rotcleaver
A Dimir zombie tribal deck from Innistrad: Midnight Hunt, led by Wilhelt, the Rotcleaver, generate decayed tokens when zombies die, sacrifice them to draw cards, and flood the board faster than opponents can clear it.
